There is a method posted if you are interested:

http://www.ehow.com/how_5902625_make-black-garlic.htmlAnonymousnoreply@blogger.comtag:blogger.com,1999:blog-1198051313002658924.post-91125823501983217072009-05-12T08:06:00.000-07:002009-05-12T08:06:00.000-07:00I'll definitely buy it again, and I'll try your pe...I'll definitely buy it again, and I'll try your pesto recipe. The tip from fruitnut above is great...Friedas.com sells it for much, much less than what I paid. I'm going to try the Korean markets here in NYC to see if I can find it for less. I will also try the same technique with ginger and other flavorings, because it was insanely easy and insanely delicious. Thanks again for the inspiration.

http://www.fieldandstream.com/photos/gallery/hunting/big-game/where-hunt-big-game/2009/05/fs-adventure-city-girl-african-safari?photo=0sweetclafoutisnoreply@blogger.comtag:blogger.com,1999:blog-1198051313002658924.post-70192775864288152932009-05-11T20:51:00.000-07:002009-05-11T20:51:00.000-07:00You're so welcome! It was expensive ($8 a head). I wanted to use it simply with chicken so the flavor of the garlic would be highlighted, and I found your blog. I didn't use the ginger because I didn't want the flavors to compete, but I made black garlic butter with thyme and a little fresh lemon juice, and put it under the skin. I'd read the same Melissa Clark article about roasting chicken on bread and had planned on trying it. My husband and I agreed that it was the best roasted chicken we've *ever* had. The bread was amazing with the drippings. Thank you for the fantastic idea.sweetclafoutisnoreply@blogger.comtag:blogger.com,1999:blog-1198051313002658924.post-68166900504061389682009-05-08T13:13:00.000-07:002009-05-08T13:13:00.000-07:00Also available at Friedas.comAlso available at Friedas.comAnonymoushttps://www.blogger.com/profile/11528215273913634798noreply@blogger.comtag:blogger.com,1999:blog-1198051313002658924.post-48279022906387091462009-03-19T11:11:00.000-07:002009-03-19T11:11:00.000-07:00Ditto on the interest in creating Aged garlic at h...Ditto on the interest in creating Aged garlic at home.
